Winemaker Notes: Brut Champagne
The art of blending is the key to the high quality and value of Korbel Brut. We blend multiple varieties (Chardonnay, Chenin Blanc, French Colombard and Pinot Noir) from multiple appellations and even multiple years. Each grape variety and appellation we use contributes a unique character to the final blend. The goal is to make a California champagne that consistently delivers the lighest level of quality.
Winemaker Notes: Brut Rose Champagne
We use Pinot Noir, Sagiovese and Gamay lots that have a noticeable pink hue for the Brut Rose. We try to find lots that have generous strawberry and black cherry like flavors. The goal is to consistently produce a Rose that is flavorful, bright and aromatic.
One interesting aspect of making a Rose using the classic Methode Champenoise process is the color balance. The yeast used in the bottle fermentation removes some of the color from the California champagne, the amount of color lost is unpredictable. We use a small amount of young red wine in the sweetening dosage. This adjusts the color back to a nice pink hue and adds a nice note of complexity.
Winemaker Notes: Sweet Cuvee
Blended from a combination of Chenin Blanc, Chardonnay, French Colombard, Muscat Canelli and Pinot Noir, Korbel's Sweet Cuvee has a bright citrus and tropical fruit character that complements the medium-sweet finish.
