Harvest
Korbel Rouge
is a true sparkling red wine. The blend is based on Russian River
Valley Pinot Noir. We blend in other red varieties from
warmer parts of Sonoma County. The current release contains small
amounts of Cabernet Sauvignon and Zinfandel. All of these
varieties are crushed and fermented in the traditional red wine
manner to make a full colored red wine.

Notes
Its fun to
tell friends that you are bringing a bottle of champagne, then open
a bottle of Korbel Rouge and watch the jaws drop! Rouge is a
delicious way to enjoy champagne with a BBQ or many other foods
that would normally not be associated with bubbly. The black cherry
and ripe red fruit characters of the Pinot Noir and Zinfandel blend
nicely with the tannins and slight herbal character of the Cabernet
to make a rich and flavorful final blend.
Winemaking
The red
grapes used for Korbel Rouge Champagne are crushed into stainless
steel holding tanks where they are fermented for a week or more on
the skins. Every day the juice in the tank is pumped over the skins
several times to extract the color and flavors from the skins.
After fermentation the skins are pressed and the new wine is aged
in stainless steel tanks and oak barrels. Finally, the
classic Methode Champenoise process is used to make the red wine
into Korbel Rouge Champagne.
Food
Pairing
Korbel Rouge
is excellent with a holiday turkey dinner. It also teams
perfectly with hearty pastas, red meats and robust seafood dishes.
Try champagne turkey lasagna, tomato base foods; soft-shell crab
with roasted tomato sauce, gazpacho, blue cheese ravioli in a
Korbel Rouge sauce.
